Food: White Chili

This is one of my favorite Autumn/Winter recipes. If you have been a guest in our home you have probably had this once, twice, maybe more! Since almost everyone who tastes it asks for the recipe I thought it was time to blog about it!

My dearest friend Crystal Lynn introduced this to me, and I believe she found it in a recipe book, so I can't take credit for the taste... just for bringing it into your life!

WHITE CHILI

2 B/S Chicken Breasts
1 medium Onion
2 cans of Chicken Broth
2 cans of Northern Beans (small, white beans), drained & rinsed
1 (4oz) can of chopped Green Chilies
2 teaspoons of Cumin
1 package of Country Gravy Mix

1 cup of Cold Water
1. Cook chicken (I usually use the George Foreman!)
2. Saute Onion
3. Add chopped chicken, Broth, Beans, Chilies, and Cumin
4. Bring to a boil
5. Mix Country Gravy Mix with the cup of water before adding it to the mixture
6. Simmer for 15 minutes and serve

Servings: 4-6 depending on bowl size

Toppings: Sour cream, shredded cheese, and Fritos (these are a must!!!!)

Also serve with cornbread!
